Blissful Blueberry Trifle

Blissful Blueberry Trifle

Fresh blueberries, yogurt, blueberry muffins and whipped cream make this Trifle almost too good to be true. It tastes like a major splurge, but it is calorie-wise and full of fiber and protein.

1
package Fiber One Blueberry Muffin Mix
3/4
cup water
2
tablespoons vegetable oil
2
large eggs
2
6 oz. containers Blueberry Yoplait Greek Yogurt
1
cup fresh blueberries
1
8 oz. container fat free whipped topping, thawed
  1. Prepare Fiber One Blueberry Muffin Mix according to package directions. Once muffins have cooled, cut 4 of them into bite-sized cubes. The package makes 12 muffins, so serve the other 8 for breakfast the next day. Muffins can be made ahead - the day before or up to an hour before the dessert will be served.
  2. Stir the Blueberry Yoplait Greek Yogurt and spoon one-third of it into the bottom of a glass bowl. Top the yogurt with one-third of the cubed blueberry muffins, one-third of the fresh blueberries and one-third of the whipped topping.
  3. Create 2 more layers of the 4 dessert ingredients so the glass bowl contains 3 layers in all. Store the dessert in the refrigerator, loosely covered, until ready to serve.
