Black Beans and Greens

Ingredients

  • 3 tablespoons fat-free Italian dressing
  • 1/2 teaspoon grated lime peel
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh cilantro
  • 1 can (15 oz) black beans, drained, rinsed
  • 3 1/2 cups mixed salad greens (about half of 10-oz bag)
  • 1 medium tomato, cut into wedges
  • 1/2 avocado, pitted, peeled and chopped (1/3 cup)

    In 1-cup measuring cup, mix dressing, lime peel, lime juice and cilantro.
  • 2
    In large bowl, toss beans, salad greens and tomato. Stir in dressing mixture until salad is coated. Top with avocado.

  • For added crunch, divide salad among six plates and arrange baked tortilla chips around the edge of each plate.
  • Avocados contain vitamin E, an antioxidant thought to help protect against heart disease and some types of cancer.
