Fresh and colorful veggies join black beans in this flavor-packed side-dish salad made with a hint of citrus - ready in just 10 minutes!
tablespoons fat-free Italian dressing
teaspoon grated lime peel
tablespoon lime juice
tablespoon chopped fresh cilantro
can (15 oz) black beans, drained, rinsed
cups mixed salad greens (about half of 10-oz bag)
medium tomato, cut into wedges
avocado, pitted, peeled and chopped (1/3 cup)
In 1-cup measuring cup, mix dressing, lime peel, lime juice and cilantro.
In large bowl, toss beans, salad greens and tomato. Stir in dressing mixture until salad is coated. Top with avocado.
For added crunch, divide salad among six plates and arrange baked tortilla chips around the edge of each plate.
