I subbed veggie broth so this dish would actually be vegetarian. Not a bad dish over all. I am glad I only added one onion. Next time will add some bell pepper. I didn't find the sweet potato to be overwhelming, instead it provided a nice counterbalance for the spice. (used homemade spicy black beans instead of all the canned.)

It's not vegetarian if it has chicken broth! However its an easy way to create a solid meat-free recipe. Consier the recipe as an insprational starting point. I susbstitued vegetable broth, used reconstituted dry black beans (losing a lot of sodium) and added a lot more veggies (diced celery, bell & hot peppers, zucchini, etc.) to make the falvors more complex. The core sweet potato taste is not as overwhelming that way.

This smelled so good all day cooking...So when I took one bite and thought it was horrible I was very disappointed...tried it with some rice and still couldn't swallow it. Even my husband didn't like it. We threw it out and grabbed something out of the freezer for dinner.
