Wow! Amazing enchiladas, so easy to make and so tasty! Everyone loved them, although next time I'm using less onion (used about half) -- bit too spicy for my family's taste, although I thought they were great! Will definitely make again :)

My husband and 2 1/2 yr old liked these. I don't know if I'll make it again, it was about as easy as it can get with this dish but I don't know if the salsa and the enchilada flavors mix in the same dish. It almost seemed combative in the seasonings/spices btwn the two sauces. I think to add a can of chilies and diced tomatoes would've been better than the salsa.

I LOVE THESE!!! I make them almost every week for my family and we all love them! I have changed some of the recipe since I am starting to loose weight and I have had to cut calories. I use reduced sodium black beans, a more pico de gillo style salsa and reduced fat cheese. Suttle changes make all the difference and these still taste AMAZING!

The first time I made this I fell in love. Deep in love. These enchiladas were so good! I will continue to make these for sure. My roommates, both being male, weren't to happy with the fact that there is no meat in these enchiladas, but they also loved them! I have made them with about a cup of chicken and they were a huge hit! I recommend this recipe to anyone and everyone and just add some chicken if you must have meat.

Made this last night for dinner! These enchiladas are to die for!!! So, so, so good! I used mild green enchilada sauce. They were so filling. My Husband loved them. We're trying to do at least one vegetarian meal a week. This is a recipe I will cook over and over again! Thank you Betty Crocker for another great recipe!

Love this recipe! i have tried it 3 x now and make a double batch as it freezes very well. Only change is I add extra echilada sauce -esp if planning to freeze. Serve with sour cream on top and a side of yellow rice - we love this no-meat, filling meal!
