Made this a couple times. Served it a large family gathering and everyone loved it. I got a lot of requests for the recipe. Definitely a keeper.

This tex-mex salad has mixed reviews in the home. This is my first experience with Jicama, and we like it. Some may expect a very spicy and creamy dish, but this is a refreshing vinegar cool salad this is better the longer it sits. It is super filling too.
