Pull together these cheesy, easy meatless enchiladas with the help of a few Green Giant and Old El Paso pantry standards. Black beans, corn and green chilies lend colorful Mexican flavor.

I made this recipe a few nights ago. I thought it had great flavor. However I did add some diced jalapenos and seasoned grilled chicken, Just to beef it up and add more spice. It was a hit in our home. Served it with sliced avocados and shredded lettuce, and some sour cream. Yum !

Made a batch of the enchiladas. Everyone really loved them! They were so tasty with just the right amount of heat, combined with the sweetness of the corn and the wonderful melty, smooth cheese, everything. And pretty, too. Used a can of diced tomatoes with green chilies instead of enchilada sauce. Worked beautifully. Will make again!

Pretty tasty. ended up using two small cans of green chilis instead of one, added a one pound can of chicken, used 2% cheese instead of regular,added a bit of cumin and used the green chili enchilada sauce instead of the red. I also chopped some cilantro on top once they were out of the oven. These got rave reviews from my family. Did a side salad and chopped avocado. Yum!

Pretty good recipe. Made a lot of enchiladas with 8" tortillas. Only needs one pkg frozen corn. My biggest complaint is the so-so flavor. Next time maybe I'll add chopped jalapenos or poblanos. Used fat free cheese and light sour cream with no problems. Good reheated too.

Very tasty! I messed up though and didn't have black beans when I thought I did. No big deal--I used Kidney Beans and it turned out great. I added shredded chicken to mine. I also used whole wheat tortillas. I smeared fat-free refried beans on the tortilla before filling it with the mixture. I baked and also broiled the top. Would make again for certain!

I doubled this recipe and used green enchillada sauce instead of red. My family is Hispanic so it needed some heat, I chopped 4 serrano chilies into the filling, delicious! Will make again!

I thought this dish was very easy to make and quite tastey. I did make a few changes, like opting out of the green chiles and instead using a little cilantro. I just made some guacamole for the topping and it was delish. Mmmm...definitely be making this one again!

Ok, well this meal was a real hit with my family. If you are concerned with the nutritional facts tweek it. If not make it as it is. But the ratings should only be based on the recipe itself and the way it cooks, tastes, ect... Not on how much fat or sodium is in it. I made some changes to mine but that's nothing unusual. I do that to most recipes.
