These are Good! Bean and cheese enchilada, what's not to like? I used more enchilada sauce and put some on the bottom of the baking dish so the tortillas don't get crispy on the bottom and release easier when serving. The extra spice as suggested earlier was good, too. I also like to sprinkle some sliced black olives on top for a little "nutty" flavor.

My daughter asked me to make some enchildas for a party, I used this recipe because I had none. She said that they were awesome and that everyone raved. She took the leftovers to work to share and again they absolutely loved them. I doubled the recipe and used a whole pckg of "corn" tortillas(30) Instead of flour. I also softhened the tortilla in hot skillet before I rolled them. Next time I will add more enchilda sauce. Recipe is easy and very delicious!

Worked well with low-fat Mexican cheese blend. My boyfriend and I managed to eat all eight enchiladas for dinner last night! The bottom of the enchiladas got a little bit too crunchy, though, so I will be experimenting to see if I can fix that next time...

I LOVE this recipe! I double it, so we have leftovers which heat up in the microwave in a flash! I use reduced fat cheese as well as reduced fat sour cream to put on top. I have also passed this recipe on to family and friends.

Quite successful! Used 2% milkfat cheese and they turned out great. Also made some with no cheese (lactose intolerance) and some with no beans (bean intolerance?), and still a big hit. Very versitile. Made the BC spanish rice on the side and had a tex-mex night!
