cups cut-up cooked chicken

can (11 oz) Green Giant® SteamCrisp® Mexicorn® whole kernel corn with red and green peppers, drained

can (10 3/4 oz) condensed cream of chicken soup

cups shredded Monterey Jack cheese (8 oz)

cups Original Bisquick® mix

cup milk
  • 1 Heat oven to 375°F. In 8-inch square (2-quart) glass baking dish, mix chicken, corn, soup and cheese.
  • 2 In medium bowl, stir Bisquick mix and milk with fork or wire whisk until soft dough forms. Place dough on surface dusted with Bisquick mix. Knead 10 times. Roll into 7 1/2-inch round, 1/2 inch thick. With 2 1/2-inch round cutter, cut 6 biscuits. Place on chicken mixture.
  • 3 Bake 20 to 25 minutes or until biscuits are golden brown.

    Needs a little tweaking for me and child but hubby liked it. I think the extra soup and biscuits on the side would have worked much better. Won't be a favorite but a possible if I have everything on hand and will throw in some other veggies too.

    This is great- my husband and his teenage son both went back for more. I agree with those who suggest cooking the biscuits on the side and then putting them on, they didn't want to cook through on top of the casserole. I didn't need to add any extra soup, it was fine as it was. We all loved this, so I know what I'll be doing with leftover chicken from now on. So glad I found this recipe! :)
