Birthday Cake Cookies

    Heat oven to 350°F.

    In large bowl, stir cake mix, sprinkles, melted butter, milk and egg until well blended. On ungreased cookie sheets, drop dough by tablespoonfuls 2 inches apart.

    Bake 8 to 10 minutes or until edges of cookies are set. Cool on cookie sheet 2 minutes; remove to cooling rack. Cool completely, about 30 minutes.

    For each sandwich cookie, spread generous tablespoonfuls frosting on bottom of 1 cookie. Top with second cookie, bottom side down; gently press together.

    Place nonpareils in small bowl, and roll edges of cookies. Store covered in airtight container with waxed paper between layers.

  • Rainbow candy sprinkles are added to the batter and offer a bright, party-like feel. If you don’t have rainbow sprinkles in your pantry, feel free to omit them.
  • Using a cookie scoop makes quick work of portioning out cookie dough so cookies will be the same size and bake the same amount of time.
  • Cookies turn out best when baked one sheet at a time on the middle oven rack.
  • For a special birthday treat, place a birthday candle in center of sandwich cookie.
