My Mother was Greek and coked for 7 children. This was one of our favorite salads. This recipe is in memory of her . When the salad is plated you can garnish with a Balsamic Vinegar Glaze.

3 x 1/2" Round Cut Watermelon Slices *They look like sliced tomatoes*

tablespoon Freshly Squeezed Lime Juice

tablespoon Extra Virgin Olive Oil

cup Crumbled Feta Cheese

tablespoon Freshly Chopped Mint Leaves

teaspoon Basalmic Vinegar Glace for garnishing *see last step*
  1. Mix all ingredients except for Basalmic Vinegar Glace with watermelon and marinate in the refrigerator for 15 minutes at least.
  2. Place two watermelon slices with mixture on a 9" plate.
  3. Final step is to garnish around the two slices with 1 teaspoon of Balsamic Vinegar Glace including some atop them. The Balsamic Glace is a concentrated version of Balsamic Vinegar that develops a sweetness with concentrating. You can vary the lime juice, mint etc to your own taste. It's a very easy recipe, but, Mediterranean in every way !!
