Have it cold on a nice hot day or serve hot to warm you up on a blistery winter evening, any way you want it this soup will surely never disappoint!

Ingredients

cups reduced sodium vegetable or chicken broth
1
28oz can diced tomatoes
1
15oz can white cannellimi beans, drained
2
carrots, chopped
1
celery stalk, chopped
1
cup chopped onion
1
teaspoon dried thyme
1/2
teaspoon dried sage
2
Bay leaves
salt, to taste
Black Pepper,to taste
2
cups ditalini pasta
1
medium zuccinni, chopped
2
cups chopped fresh or frozen spinach
parmesan or Romano cheese sprinkled to taste

  • 1 In medium crock pot, combine broth, tomatoes,beans, carrots, celery, onion, thyme, sage, bay leaves, and 1/2 teaspoon each saslt and black pepper. Cover and cook on high for 3-4 hours
  • 2 Important: 30 minutes before soup is done cooking add ditalini, zucchini and spinach. Cover and cook 30 more minutes. Remove bay leaves and serve with sprinkled cheese.
