Best Hot German Potato Salad

Super easy, this one-skillet hot German potato salad with vinegar and bacon is a great side dish, or works great in a slow cooker for a crowd.

Ingredients

large baking potatoes (red or Yukon Gold)
1
pound bacon
1
medium red onion
1
cup white vinegar
1
tablespoon celery salt
1/4
cup sugar

  • 1 Scrub potatoes. Boil in their jackets for 20 minutes until fork tender. Do not overcook. Once done, set aside until they are cool to the touch.
  • 2 While the potatoes are cooking, cook bacon to crispy in skillet. Remove bacon to drain, reserve drippings.
  • 3 Dice onion. Cook in reserved bacon drippings until tender.
  • 4 Add vinegar, celery salt and sugar. Stir.
  • 5 Crumble bacon, and add to pan.
  • 6 Slice potatoes. Add to pan. Mix until potatoes are well coated.
  • 7 Simmer for 5-10 minutes. Serve hot.
