Bento Sushi-Rice Salad

Ingredients

cup uncooked regular long-grain white rice

tablespoons unseasoned rice vinegar

tablespoon sugar

teaspoon salt

teaspoon grated gingerroot
1/4
cucumber, seeded, chopped
1/4
cup shredded carrot
1
green onion, sliced (1 tablespoon)
  • 1 Cook rice as directed on package.
  • 2 Meanwhile, in small bowl, mix vinegar, sugar and salt. Stir until sugar is dissolved.
  • 3 Stir vinegar mixture and remaining ingredients into rice. Refrigerate about 30 minutes or until cold.

Expert Tips

For more color and crisp texture, add 1/4 cup sliced celery and 1/4 cup diced red bell pepper to the salad.

Add cooked shrimp to turn this salad into a main-dish salad.

Garnish with additional green onion slices.
