Ingredients

  • 1/2 green bell pepper, seeded and cut into 6 strips
  • 1/2 red bell pepper, seeded and cut into 6 strips
  • 1/2 yellow bell pepper, seeded and cut into 6 strips
  • 3/4 cup shredded Monterey Jack cheese (3 ounces)
  • 2 tablespoons chopped ripe olives
  • 1/4 teaspoon crushed red pepper

Steps

  • 1
Cut bell pepper strips crosswise in half. Arrange close together in ungreased broilerproof pie pan, 9x1 1/4 inches, or round pan, 9x2 inches. Sprinkle with cheese, olives and red pepper.
  • 2
Set oven control to broil. Broil peppers with tops 3 to 4 inches from heat about 3 minutes or until cheese is melted.

Tips from the Betty Crocker Kitchens

  • tip 1
Rajas "strips" usually refers to ribbons of chilies.
  • tip 2
No need to limit yourself to Monterey Jack cheese. Use any variety you’d like, or use both a yellow and a white cheese for color contrast.
