green bell pepper, seeded and cut into 6 strips

red bell pepper, seeded and cut into 6 strips

yellow bell pepper, seeded and cut into 6 strips

cup shredded Monterey Jack cheese (3 ounces)

tablespoons chopped ripe olives
1/4
teaspoon crushed red pepper
  • 1 Cut bell pepper strips crosswise in half. Arrange close together in ungreased broilerproof pie pan, 9x1 1/4 inches, or round pan, 9x2 inches. Sprinkle with cheese, olives and red pepper.
  • 2 Set oven control to broil. Broil peppers with tops 3 to 4 inches from heat about 3 minutes or until cheese is melted.

Rajas "strips" usually refers to ribbons of chilies.

No need to limit yourself to Monterey Jack cheese. Use any variety you’d like, or use both a yellow and a white cheese for color contrast.

    Love these! I call them "healthy nachos". I also like to add some chicken; then after broiling I add guacamole, salsa and sour cream and it becomes a meal. If you cut the peppers in large "planks", then you can easily pick them up like chips. Also, if you use the microwve, the peppers will get soft and you'll need to use a fork and knife to eat them (which is ok too--still yummy). Using the broiler helps the peppers keep their crispness. :-)

    I made these last year for a pre-Thanksgiving meal appetizer. Not only did they look great, they tasted fabulous, too! Something different and VERY easy to make.
