Love these! I call them "healthy nachos". I also like to add some chicken; then after broiling I add guacamole, salsa and sour cream and it becomes a meal. If you cut the peppers in large "planks", then you can easily pick them up like chips. Also, if you use the microwve, the peppers will get soft and you'll need to use a fork and knife to eat them (which is ok too--still yummy). Using the broiler helps the peppers keep their crispness. :-)

I made these last year for a pre-Thanksgiving meal appetizer. Not only did they look great, they tasted fabulous, too! Something different and VERY easy to make.
