Beer Margaritas

Blogger Cheri Liefeld of Adventures in the Kitchen shares a favorite recipe. This recipe combines two favorites into one cool summer drink. I have fond memories of sipping these on summer nights with good friends by the beach.

Ingredients

1 3/4: cups frozen (thawed) limeade concentrate

: Margarita salt or kosher (coarse) salt

: Crushed ice

1/2: cup Mexican beer

1/2: cup gold tequila

5: slices lime

Directions

1 Pour 1/4 cup of the limeade concentrate into small bowl. Place salt on small plate. Dip rims of 5 rocks or margarita glasses into limeade and then into salt; set aside.
2 Fill blender with ice; add beer, tequila and remaining 1 1/2 cups limeade concentrate. Cover; blend until smooth. Pour into salt-rimmed glasses. Garnish with lime slice.

Expert Tips

Salt the glasses and refrigerate until party time. You can also mix the beer, tequila and limeade 2 hours ahead and chill, then blend with ice just before serving.

These are fruitly summer-refreshing, but with the added subtle depth of the hops and malt from the beer. They go very well with BBQ'd shellfish (think shrimp or scallop skewers) that features a lemon-lime marinade, or just grilled clams or oysters with a finishing spritz of lemon.
