Beer Marshmallows

envelopes unflavored gelatin

cup flat beer
2
cups granulated sugar

cup light corn syrup

box Betty Crocker® Original Supreme Premium brownie mix

cup vegetable oil

  • 1 To make Beer Marshmallows, generously oil 13x9-inch (3-quart) glass baking dish; sprinkle with powdered sugar.
  • 2 Place gelatin in large bowl for stand electric mixer; add 1/2 cup of the beer. Lightly stir with spoon; set aside to soften gelatin.
  • 3 Meanwhile, fit candy thermometer to side of 3-quart saucepan. Add 2 cups granulated sugar, the remaining 1/2 cup beer, the corn syrup and salt; cook over low heat about 3 minutes, beating with whisk until sugar is dissolved. Increase heat to medium; cook 6 to 8 minutes longer or until thermometer reads 240°F. Remove from heat.
  • 4 Using electric mixer with whip attachment, beat softened gelatin on low speed while slowly pouring very hot sugar mixture into gelatin. Increase mixer speed to high; beat about 10 minutes or until light and fluffy.
  • 5 While gelatin-sugar mixture is being beaten, place egg whites in large bowl. Using hand mixer, beat until stiff peaks form.
  • 6 Add beaten egg whites and vanilla to whipped gelatin-sugar mixture; beat until incorporated. Pour mixture into baking dish. Generously sprinkle powdered sugar over top. Let stand 4 hours or until firm. Turn marshmallow out onto cutting board; cut into 1-inch squares.
  • 7 To make Brownies, heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 8- or 9-inch square pan with cooking spray or grease with shortening.
  • 8 In large bowl, mix graham cracker crumbs, melted butter and 2 tablespoons granulated sugar. Press in bottom of pan. Bake 5 minutes.
  • 9 Meanwhile, in medium bowl, stir together brownie mix, pouch of chocolate syrup, water, oil and egg until well blended.
  • 10 Spread brownie batter over partially baked graham cracker crust.
  • 11 Bake 8-inch pan 38 to 40 minutes (9-inch pan 34 to 37 minutes) or until toothpick inserted 2 inches from sides of pan comes out almost clean. Cool completely, about 1 hour 30 minutes. Cut brownies into 4 rows by 4 rows.
  • 12 To make Beer and S’mores Brownies, set oven control to broil. Place cut brownies on cookie sheet. Top each with 1 or 2 beer marshmallows. Broil 10 to 30 seconds or until tops are browned and marshmallows begins to ooze.

Expert Tips

When cutting the brownies, remove them from the pan to a cutting board. Use a sharp chef’s knife and clean the blade after each cut.

Replace the beer marshmallows with store-bought marshmallows for a quick s’mores brownie.
