Not sure if it was because I used some of my own left over enchilada sauce, which tasted great on regular enchiladas, or what but we did not really enjoy this. Kind of felt like it was a waste of a lot of good ingredients I could use on something else. It just tasted weird, the tortillas were soggy and I didn't feel like the cilantro or olives on top were much help either. Didn't even eat the leftovers of this one. :(

I can never find the Enchilada kit in the store, so I substitute a can of Enchilada sauce, and a packet of Enchilada seasoning, and use regular soft tortillas. Oh, and my green chiles are the kind with tomatoes too. LOL It's super easy and very yummy to make though!!!

This was very easy to make. I didn't have the El Paso kit either. I made a packet of McCormick enchilada sauce. I put about 3/4 of the sauce and a small can of pork-n-beans into the meat. Also, I cooked it without the onions and without the sour cream because not everyone in our house like those. I served chopped onions, chopped tomatoes, and sour cream on the side. It was very tasty and we'll be making it again.

Well, I didn't have an enchilada kit so I used 1 can of red enchilada sauce, 1 packet of taco season and a can of rotel (drained). It was very very good but next time I will add a few more tortillas.
