My husband loved this and immediately told me he would ask to have this again. I added Fritos on top and left the "salad" on the side. We also ate with sour cream. The leftovers were quite dry though; next time we will eat them in flour tortillas.

This was really good and really easy to make! I had leftover regular cooked rice in the fridge that I wanted to use up so I didn't use as much water as the recipe called for. I just followed the directions on the taco seasoning packet for the water and then stired the already cooked rice in last. Even my picky 4 year old ate some!

Good--better than Hamburger Helper! Didn't have salsa, so I used fresh garden tomatoes and diced onion, plus bumped up the spices. Kids didn't like the corn, next time I will substitute can of rinsed black beans. I also used regular 20 minute rice, increased the water and cooking time.

I love Mexican food, I love skillet dinners and I love cheese...but sorry to say I did not love this dish. Like one of the reviewers below, my rice was not done (and I used instant rice). I added more water and let it simmer a bit longer, but it really never got soft and "fluffing" was impossible. I gave it 3 stars because it did have a hearty, stick-to-your ribs quality I liked. I will stick to my tried and true Mexican Spaghetti...just as easy to make and more delicious.

This was a really great dish. My boyfriend loved it! I added chopped onion to the hamburger when it was browning and cut the salsa amount in half. We tried it served with sour cream, lettuce, and tomatoes,and also as a chip dip. Was awesome both ways!

This turned out to be a very easy dish. And to top it off the taste was great. I also added olives to top it off. Next time I will also add green chili's. My husband also stated that it would be good in burrito's.

For nicenmary~ The recipe calls for instant rice. It sounds like you used regular long-cooking rice. Try it again with the correct ingredient & your results should be much better.

This recipe was extremely easy, and delicious. We will definitely make it again and again. I used instant brown rice, and instead served torn lettuce, chopped fresh tomatoe, and a dollop of fat-free sour cream on the side of the rice meal on our dinner plates (rather than add these to the skillet).
