Wasn't bad at all. I didn't have any guacamole made up, so I omitted that. I did have sour cream, however. Only change I made was that I added 1 tsp. chipotle powder to the marinade for a little extra kick. I also didn't need the cornstarch/water mixture, it cooked down enough on it's own.

sounds so good and easy! after reading comments I'm wondering if the marinade would be just as good, not too sweet, if the amount of honey was cut by half...? this recipe is almost too easy not to try it!!

The marinade wasn''t very good at all.. it was a gross kind of sweet. And despite the chili pepper, it wasn''t spicy in the least. Not a repeat..

I already had on hand marinated cooked beef strips purchased from a wholesale club. So, I made up the marinade for the veggies. Eliminated the guacamole (husband doesn''t like), but added chiles and cheese to refried beans instead. I also served with shredded lettuce, sour cream, grated cheese and salsa. Turned out great. Would make again.
