I love the enchilada sauce in this recipe. However, I don't use the corn tortillas often. I use the flour tortillas. I do dip the flour tortillas in the sauce but I don't place the sauce in the pan first. I only use the sauce after I bake them. They taste so good when you do it like that on top of the melted cheddar cheese. As a meal, I make mexican rice and no-refried pinto beans.

My family has enjoyed this recipe for years. The only thing I do differently is double the sauce ingredients since we like our enchiladas w/ a lot of sauce.
