Question and Review Why do so many Mexican recipes have corn for a main ingredient. We love Mexican food, but, I am unable to eat corn. I am sure that I am not the only person that cannot eat corn. Therefore I leave corn out of so many things I cook. The recipe is good.

I don't care for corn tortillas in enchiladas, I always use flour tortillas instead. The corn tortillas always get soggy. If you spray flour tortillas with a little Pam and then heat them slightly first, they don't get soggy at all and make great enchiladas!

This was a great recipe. I changed it just a bit because I don't like the taste of just the enchilada sauce. So I added half of cream of chicken soup and a bit of milk. It was delicious.
