Beef-Barley Stew

Ingredients

lb extra-lean (at least 90%) ground beef
1
medium onion, chopped (1/2 cup)
2
cups Progresso® beef flavored broth (from 32-oz carton)
2/3
cup uncooked barley
2
teaspoons chopped fresh or 1/2 teaspoon dried oregano leaves
1/4
teaspoon salt
1/4
teaspoon pepper
1
can (14.5 oz) whole tomatoes, undrained
1
can (8 oz) sliced water chestnuts, undrained
2
cups Green Giant® frozen mixed vegetables

  • 1 Heat oven to 350°F. Spray 10-inch nonstick skillet with cooking spray. Add beef and onion; cook in skillet over medium heat 7 to 8 minutes, stirring occasionally, until beef is brown; drain.
  • 2 In ungreased 3-quart casserole, mix beef mixture and remaining ingredients except frozen vegetables, breaking up tomatoes.
  • 3 Cover; bake 30 minutes. Stir in frozen vegetables. Cover; bake 30 to 40 minutes longer or until barley is tender.

To the 1st gal who tried the stew, try adding 1 tsp thyme, 1/2 tsp rosemary, and a beef bouillon cube to the original recipe. If your meat was tough, then next time cook in a crockpot for 4-5 hrs or low(saute meat 1st) Just a thought.

Just made this stew tonight and it was just ok. I used stew beef chunks instead of hamburger. I'm assuming that's why it was just ok.
