Ingredients

lb lean (at least 80%) ground beef

jar (16 oz) Old El Paso® Thick 'n Chunky salsa (2 cups)
1
can (15 oz) Progresso® dark red kidney beans, undrained
1
can (7 oz) Green Giant® Niblets® whole kernel corn, undrained
1
can (8 oz) tomato sauce
2
teaspoons chili powder
1 1/2
cups Original Bisquick® mix
1/2
cup milk
1/2
cup shredded Colby-Monterey Jack cheese (2 oz), if desired

Directions

  • 1 In 12-inch skillet, cook beef over medium heat, stirring occasionally, until brown; drain. Stir in salsa, beans, corn, tomato sauce and 1 teaspoon of the chili powder. Heat to boiling; reduce heat to low.
  • 2 In medium bowl, stir Bisquick mix, remaining 1 teaspoon chili powder and the milk until soft dough forms. Drop dough by 6 spoonfuls onto simmering beef mixture.
  • 3 Cover; cook about 20 minutes or until dumplings are light and fluffy inside. Sprinkle with cheese. Cover; cook about 2 minutes or until cheese is melted.

Enter your review here...This was very good and tasty. I will be making it again. After reading the reviews I turned the heat up to 5 so it was bubbling and the biscuits cooked very well. Maybe your heat was too low. Mine was done in 20 minutes. A quick dish to make and very filling.

this was really good for something to throw together. I didn't have tomato sauce or beans but it still tasted great! I added extra corn and the liquid from the canned corn. I did have problems with the bisquits though. after 20 minutes I took the lid off and cooked for another 10 minutes and turned up the heat to medium low. they still weren't done so i put the lid on for almost 10 minutes. Next time i would cook it in a bigger pot maybe so they have enough room or i might only make half of what the recipe calls for. Still great!

I thought this recipe was different with the Bisquick up top, and I didn't have problem with the dough- making about 6 spoonfuls. I would recommend not using just straight salsa, too salty. Maybe add 50/50 mix of salsa and Rotel. Watch the sodium- Heart disease is a killer!
