I think the next time I make them, I will use corn tortillas, that I will fry in oil ,just until they are hot, not crispy. I did add sliced olives, sliced jalapenos, diced tomatoes, onto the tops of the enchiladas before pouring on the sauce, I added red pepper seasoning, chili powder, cumin & garlic powder to the meat & corn mixture while cooking.This turned out 8 burritos.I gave it three stars, because it was too bland, but could be a 5 star with the above mentioned items. Fajita seasoning might also be good in this recipe.

The only thing I can say to do in this recipe would be to take some aluminum foil and spray it with cooking spray and cover the dish and then bake. It helps keep the cheese from becoming crispy. Otherwise, awesome and quick

I found this a very easy and tasty meal. My husband even went back for more. I came out with 6 medium sized enchiladas. Next time I may add some chile seasoning for alittle more bite. All said and down, I will fix this again.

These were pretty good, but I felt like they were missing a little bit. I seasoned the beef with taco seasoning and put on extra sour cream once they were out of the oven. It could have been the fact that I used very lean meat though.

I ended up getting 12 enchilidas out of this recipe. 2 were plenty for my husband and I (with a side salad) so we got 3 nights of meals out of this. I add cilantro and after rolling 6 jalapeno (it was too hot for me the first time) for my husband. Easy recipe with a good taste!

This was pretty and easy and tasted pretty good, though a bit bland for me. Also, instead of melting all lovely like in the picture, the cheese on top just sort of turned into a hard crust. Next time I'll wait and add the cheese when there are only 15 or so minutes left, I think that will help. I'm also thinking of adding some spices to the meat to give it that extra spicy kick and maybe adding some re-fried beans and more enchilada sauce next time too.

This was a very easy recipe to make. The taste was fantastic. I did add some mile green chile salsa to the green chile sauce which increased the flavor. Great leftover!

Absolutely delicious! Be sure to give this recipe a try! Instead of frozen corn, I drained the liquid from a can of Niblets corn. And I added sliced black olives with jalapeno pepper bits.
