I made this for my family, the only thing I did different was I did not put the lettuce and tomatoes on top. I waited until I made the plates and put it on then. The reason being heating up the leftovers. My husband took the leftovers to work and everyone in his office wanted some. We will be having this again.

Rebca had a great idea with her tweaking of the recipe. With the Rotel, I only used half of the taco seasoning. This is a simple, and simply great recipe.

Some tips for economy: Why do you specify that the ground beef be at least 80% lean if you are going to drain it anyway? Ground beef with more fat is usually cheaper, just increase the amount slightly to compensate for fat loss. Since most of the tomatoes get cooked, you could save by using canned diced tomatoes with peppers or chilies and using fresh only for the toppings. Corn tortillas cut into pieces would work just as well for the chips on the bottom and be much cheaper.

Extremely easy and a hit with the family. I did modify the original recipe slightly. I used Black Beans, in place of Refried Beans. I left off the bell pepper. I used 1 can of Rotel tomatoes with 1/4 of the Salsa. I added fresh cilantro into the lettuce tomato mix. Then I topped off each serving with sliced avocado and side dollop of sour cream. The tortillas were crunchy like a nacho. I did not have the soggy issue others mentioned in previous reviews. My family wants this to be a weekly meal.

This is a keeper. Used refried black beans. Also chopped up extra tomatoes, sweet onion, lettuce, sour cream, for addtional toppings. Served with niblet corn. It looked kinda sketchy (not appettising) before putting in casseole dish, however was yummy. My husband is excited since he'll have this for his lunch tomorrow.
