Ingredients

1: 19 oz. can of black, pinto, or kidney beans

1: 15 oz. can of corn

2: cups shredded jack cheese

4: sliced scallions

1: diced tomato

1: can green chilis (opt)

1: recipe corn bread

1: pkg taco seasoning mix

1: lb ground beef

Directions

1 Preheat oven to 400. Follow directions on pkg of taco seasoning using ground beef or boneless chicken breast.
2 Add beans and corn.
3 Pour into 8 x 8 baking dish
4 Top w/shredded ack cheese, scallions, tomato, and chilis.
5 Cover with corn bread batter
6 Bake 20-25 minutes.

This was delicious and will definitely be made again. Was not sure if the "diced tomatoe" was canned or not. I used a drained can of diced tomatoe. I didn't have any beans (I didn't realize that until I had already decided to make it though!) so I made the recipe without. I also added some jalapenos. It was absolutely delicious and the leftovers were even better. I would have taken a picture to add, but it is all gone now!
