BBQ Cups

lb lean (at least 80%) ground beef

cup finely chopped onion

cup hickory smoke-flavored barbecue sauce

cups Original Bisquick® mix

cup shredded Cheddar cheese (4 oz)

  • 1 Heat oven to 450°F. Spray 12 regular-size muffin cups with cooking spray.
  • 2 In 10-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in barbecue sauce; cook until mixture just begins to bubble.
  • 3 In medium bowl, stir Bisquick mix, 1/2 cup of the cheese and the milk until soft dough forms. Spoon about 2 tablespoons dough into each muffin cup. Press dough in bottom and up sides of each cup. Spoon 2 tablespoons beef mixture into each cup.
  • 4 Bake 8 to 10 minutes or until top edges of cups are golden brown. Sprinkle each with remaining cheese. Let stand 5 minutes; remove from pan.

To measure Bisquick mix, spoon into dry-ingredient measuring cup, and level with a straight- edged knife or spatula. Do not pack or tap Bisquick mix into cup.

Use one container (18 oz) refrigerated barbecue sauce with shredded beef, pork or chicken in place of the ground beef, onion and barbecue sauce. Heat as directed on package until hot before filling dough-lined cups.

you can substitute refrigerated canned bicuits for the bisquick. regular sized. if you get the flaky grands, separate each biscuit in half so they dont take up the entire tin. this is pretty close to the recipe i use, which i love. dont know why i dont make these more often :)

OMG!!!! These were awesome. My family & friends loved them. At first I said that I would not make them because it was too messy, but when they came out of the oven, I said how cute they looked & so delicious. Wow, I will definitely make them again.

Super easy to make and came out great even for my first time making it. The dough is just a tiny bit sticky, but it's dough and that's what dough does. The oven time was perfect. Exactly 10 min. Even though my muffin pan was nonstick, I still put just a tiny bit of spray on it and they slid right out. It made exactly 12, which would be good for a family of 4 or 5. Might try to cut the recipe in half next time for my small household of 3. Will totally be making these again!!!!!!
