Basil- and Crabmeat-Topped Cucumbers

Ingredients

medium English cucumber
1
package (3 oz) cream cheese, softened

tablespoons mayonnaise or salad dressing
1/4
cup chopped fresh basil leaves
2
tablespoons finely chopped red onion
2
teaspoons grated lemon peel
1
cup frozen cooked crabmeat, thawed, flaked
2
tablespoons capers, if desired
Small basil leaves or chopped fresh basil, if desired

  • 1 Score cucumber lengthwise with tines of fork if desired. Cut into 36 (1/4-inch) slices.
  • 2 In small bowl, beat cream cheese with electric mixer on low speed until creamy. Beat in mayonnaise until well blended. Stir in chopped basil, onion, lemon peel and crabmeat.
  • 3 Spread or pipe about 1 teaspoon crabmeat mixture on each cucumber slice. Sprinkle with capers. Garnish with basil leaves.

If you can’t find frozen crabmeat, use a 6-ounce can of crabmeat, well drained.

I have this mix chilling in the fridge as we speak to bring to Mother's Day gathering tomorrow. All I can say is YUM. I love the blend of the basil and lemon with the red onion-and the mix looks exactly like this picture! I used neufchatel cheese to cut down on the fat a little. Worked great. I'll assemble tomorrow. Probably best to let this blend flavors for a few hrs. Great recipe! I'll make it again and again.

I liked this, and didn't think the basil was overpowering. I made it a second time and used lemon basil and thought it was even better, the lemon overtones of the basil nicely complimented the crab. This is definitely a step up from one of my kids' favorites, tuna salad stuffed into a cucumber half. I do agree that it is improved with a bit of salt and pepper, although I do realize that many people are trying to cut their salt consumption. This is a nice cool lunch on those days when I don't want to heat up the kitchen cooking a hot meal, and if you put another cucumber slice on top they can be carried to work without too much mess.

YUCK! I only put half the stated amount of basil in it and it tasted like dirty weeds. next time i will leave the basil out completely....plus it calls for no salt and we all know that salt and cucumbers go hand in hand so that is defiantly needed!
