cup uncooked quick-cooking barley

tablespoon butter

large onion, chopped (1 cup)

clove garlic, finely chopped

tablespoons chopped fresh or 2 teaspoons dried thyme leaves

teaspoon salt

boxes (9 oz each) Green Giant® Niblets® frozen corn, thawed and drained

box (9 oz) Green Giant® frozen baby lima beans, thawed and drained
  • 1 Heat water to boiling in a 1 1/2-quart saucepan. Stir in barley; reduce heat to low. Cover and simmer 10 to 12 minutes or until tender. Let stand covered 5 minutes.
  • 2 Melt butter in 10-inch skillet over medium-high heat. Cook onion and garlic in butter about 2 minutes, stirring occasionally, until onion is crisp-tender.
  • 3 Stir in barley and remaining ingredients. Cook about 5 minutes, stirring occasionally, until thoroughly heated.
