Barbecued Pork Chops

Ingredients

  • 4 pork boneless loin chops, 1 inch thick (about 3/4 pound), trimmed of fat
  • 4 slices onion
  • 1 clove garlic, finely chopped
  • 3/4 cup barbecue sauce
  • 1 tablespoon water
  • 2 teaspoons cornstarch

    Place pork chops in 3 1/2- to 4-quart slow cooker. Top each chop with onion slice and sprinkle with garlic. Pour barbecue sauce over chops.

    Cover and cook on low heat setting 5 to 6 hours.

    About 5 minutes before serving, remove pork from cooker; place on serving platter and cover to keep warm.

    Mix water and cornstarch in 2-cup glass measuring cup or small microwavable bowl until smooth. Pour 1 cup of the juices from cooker into cornstarch mixture; mix well. Microwave uncovered on High 1 to 2 minutes, stirring once halfway through cooking, until mixture boils and thickens slightly. Serve sauce with pork.

  • If you happen to have bone-in chops in your freezer, you can use them in place of boneless chops-just make sure you thaw them in the refrigerator first.
  • When it comes to side dishes to pair with this classic dish, think green and white. Steamed green beans or asparagus and creamy coleslaw make delicious accompaniments. Add some mashed potatoes and you'll have a family-pleasing meal.
