Ingredients

Pancakes

cups Fiber One™ Complete pancake mix (from 28.3-oz box)
1 1/3
cups cold water
1/2
cup mashed ripe banana
2
tablespoons chopped walnuts

Toppings

firm ripe banana, sliced
2
teaspoons chopped walnuts
1/4
cup fat-free caramel topping

Directions

  • 1 Heat skillet or griddle over medium-high heat or to 375°F. Grease with vegetable oil or shortening.
  • 2 In medium bowl, stir pancake mix and water with fork or wire whisk until smooth (batter will be thin). Stir in mashed banana and 2 tablespoons walnuts.
  • 3 For each pancake, pour slightly less than 1/4 cup batter into hot greased skillet. Cook until bubbles break on surface and edges just begin to dry. Turn; cook about 1 minute or until bottoms are golden brown.
  • 4 Serve pancakes topped with sliced banana, 2 teaspoons walnuts and the caramel topping.

i made some serious adjustments... but they were yummy, so i'll give the recipe 5 spoons :) i used 1.5 cups mix and 1 cup water to not make as many. i didn't measure the banana, just mashed up 1 medium-sized ripe one. i also used 1/4 cup frozen blueberries instead of the walnuts... and then i topped with syrup rather than carmel sauce/nuts. this way we got fruit AND fiber in our breakfast!! i froze the leftovers in between waxed paper - i would guess a bit in the toaster or microwave would make for an easy hot breakfast in the future.

One Word- delicious!!! Instead of the caramel topping I just used a little butter and maple syrup, I thought it went better with the banana. Also I sprinkled a little cinnamon in the mix. YUMM!!
