Banana Tres Leches Dessert

Tres Leches cake is the Hispanic-influenced dessert showing up on restaurant dessert menus. Soaked in three sweet milks, this version boasts using a foolproof Betty Crocker® SuperMoist® cake mix to make it easy.

Ingredients

box Betty Crocker® SuperMoist® white cake mix
1 1/4
cups water
2
tablespoons vegetable oil
3
eggs
1
cup mashed bananas (2 medium)
1
can (14 oz) sweetened condensed milk (not evaporated)
1/2
cup (from 14-oz can) coconut milk (not cream of coconut)
1/2
cup whipping cream
1
container Betty Crocker® Whipped fluffy white frosting
Banana slices and/or toasted coconut, if desired

Directions

  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 13x9-inch pan.
  • 2 In large bowl, beat cake mix, water, oil, eggs and mashed bananas with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • 3 Bake 33 to 38 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • 4 Poke top of cake every 1/2 inch with long-tined fork, wiping fork occasionally to reduce sticking. In large bowl, stir together condensed milk, coconut milk and whipping cream. Carefully pour evenly over top of cake. Cover; refrigerate at least 2 hours or overnight until mixture is absorbed into cake.
  • 5 Spread frosting over cake. Garnish each serving with banana slices and/or toasted coconut. Store loosely covered in refrigerator.

So Yummy! Ever since my husband brought home a small loaf of Tres Leches from a Mexican bakery near his work, I have been looking for a way to re-create it at home. The first recipe I tried was a dismal failure. This recipe, however, is super easy and yummy! I had some very ripe bananas to use up, so it was perfect timing to make this. I made one for my family and we all loved it! My husband liked it so much, he bragged to his coworkers and then promised to bring one in for them, since they all love the Tres Leches from the local bakery. After trying it, his partner who grew up eating Tres Leches said it was very close to authentic and it was given his seal of approval! The recipe as it stands I am giving 4 stars. As many other reviewers already pointed out, the frosting is completely unnecessary and is just overkill. The authentic Tres Leches we enjoy from the bakery is covered in whipped cream and I did the same. With that change I would give this recipe 5 stars! Just be sure to poke lots of extra holes in the cake for the liquid to soak in. I had no problems at all with my liquid not soaking in as some others did. With extra holes, the liquid was quickly absorbed and I was able to frost and refrigerate the cake right after. This recipe is definitely a keeper!

Great flavor and super easy, but I think next time I make it, I'm going to make less of the milk mixture. Might just be how humid it is where I live, but it didn't absorb very much of it.

Made this cake for a work potluck. I was amazed by how moist and flavorful it was. For the person who asked about taking it out of the pan - no, there is no way to get it out of the pan. I used a 9" x 11" glass baking dish so it looks great. Just slice it up right out of the pan.
