cups Gold Medal® all-purpose flour

cup packed brown sugar

teaspoons baking powder

cup mashed ripe bananas (2 to 3 medium)

cup raisins
2/3
cup milk

tablespoons vegetable oil
1

  • 1 Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening, or spray with cooking spray.
  • 2 Place cereal in resealable food-storage plastic bag; seal bag and coarsely crush with rolling pin or meat mallet. In large bowl, mix cereal, flour, brown sugar and baking powder. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
  • 3 Bake 18 to 22 minutes or until golden brown.

Expert Tips

Brown bananas? Toss them, unpeeled, in the freezer. They'll be ready when you need them for any recipe using mashed bananas. Simply thaw and mash.

I agree that these muffins turned out bland. I used honey-nut Cheerios because that's what I had, and I thought it would add flavor compared to regular Cheerios, but I don't think it did. The raisins and cereal give it some good chewy texture. I think this recipe is okay, but I am not so sure I would make them again. There is something lacking in the flavor department. You wouldn't think so reading the ingredients.

I just got thru bakin these. I didn't have cheerios, so I crushed oatmeal squares. Muffins baked up quite well, and are of a very good consistency, although they are bland! Next time I bake them, I do believe that I will add some cinnamon and nuts, and maybe a tastier cereal, crushed. The flavor is good, just needs a little boost. I also plumped the raisins by bringing them to a boil and letting them sit for about 10 min., then draining. I will do that next time also!

oh my goodness. worst recipe ever. did not turn out at all and burnt on the outside and was gooey on the inside. followed directions to a T. would not reccomend.
