Banana Oatmeal Cookies

Ingredients

  • 2 cups old-fashioned oats
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1/2 teaspoon salt
  • 1 1/2 cups mashed bananas (about 3 medium)
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla

Steps

    Heat oven to 350°F. In large bowl, mix oats, raisins, walnuts and salt. In medium bowl, mix bananas, oil and vanilla. Add banana mixture to dry ingredients, stirring until blended. Let stand 15 minutes.

    Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls.

    Bake 15 minutes or until lightly golden. Remove from cookie sheets to cooling racks.

  • Switch up your nuts for a different crunch. Chopped pecans can also be used in this recipe instead of the walnuts.
  • Substitute dried cranberries instead of raisins for a colorful and tasty twist on these delicious cookies!
  • Don’t just wait for your bananas to get ripe before you are ready to bake with bananas - keep a few bananas frozen in the freezer. To freeze bananas - take a banana that is ripe to slightly over-ripe and peel it before placing it in a labelled freezer-safe bag. To use, let the banana thaw for a few minutes on the counter before mixing into your baking recipe.
