box Betty Crocker Banana Bread Quick Bread Mix

each very ripe bananas
1/2
cup chopped pecans
1/4
cup chopped pecans, for garnish
1/4
cup Betty Crocker Whipped Butter Cream frosting

each 12 cup muffin tin

each muffin tin liners
  1. Pre-heat oven to 375 degrees.
  2. Peel and mash ripe bananas, set aside.
  3. Arrange muffin tin liners in muffin tin cups, set aside.
  4. Prepare Banana Bread per package directions, and stir in the mashed ripe bananas and 1/2 cup chopped pecans. Do not overmix, batter should be lumpy.
  5. Fill each muffin cup 3/4 full (almost to the top). The batter will make 12 muffins.
  6. Bake in center of oven for 17-22 minutes. All ovens bake differently, be careful to not overbake.
  7. Remove tin from oven and allow to cool.
  8. Frost the cupcakes with Betty's Butter Cream whipped frosting and sprinkle the tops with the remaining 1/4 cup of chopped pecans.
