Banana-Chocolate Chip Coffee Cake

Ingredients

Coffee Cake

2 1/4
cups Original Bisquick® mix
1
cup mashed ripe bananas (about 2 medium)
1/2
cup miniature semisweet chocolate chips
1/4
cup granulated sugar
1/3
cup milk
2
tablespoons butter or margarine, softened
1/2
teaspoon ground cinnamon
1
egg

Glaze

1
cup powdered sugar
1
tablespoon milk
1/2
teaspoon vanilla

Directions

  • 1 Heat oven to 375°F. Spray 8-inch square pan with cooking spray. In medium bowl, stir all coffee cake ingredients with wire whisk or fork until blended. Spread in pan
  • 2 Bake 26 to 30 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 30 minutes.
  • 3 In small bowl, mix all glaze ingredients until smooth. If necessary, add additional milk, 1 teaspoon at a time, until thin enough to drizzle. Drizzle glaze over warm coffee cake. Serve warm.

Just finished making this and it is SO good and easy. To be honest, next time I will leave the chocolate chips out and maybe add 1 more banana. as for the 'glaze' I was very happy I tasted it first before putting on my cake. I then browned 2 TBP's of butter and added it to the glaze and then put on the cake. Heaven!!

Very yummy and moist thanks to the bananas. Thought maybe 8x8 pan would be just right for the two of us but nope! It's not big enough! We loved it and in one night, it's almost gone! The only changes I made was to add some nutmeg as we love that flavor and like thinking we're eating doughnuts! Oh and I did double the sugar because of one of the comments but next time maybe just 1 1/2 not 2 times the amount. We will definitely make this again for our Sunday coffee. Oh, I used two bananas but not sure I should try 4!

This cake was not very good.It was more like bread, I even put more sugar in it, Maybe it would be better with the glaze which I didn't use.
