Ingredients

cup Original Bisquick® mix
2
tablespoons yellow cornmeal
1
teaspoon salt
1/2
teaspoon pepper
1/2
teaspoon Italian seasoning
1
egg
3
medium zucchini, cut into 3x1/4-inch strips
Marinara sauce, heated, if desired

  • 1 Heat oven to 475°. Spray cookie sheet with nonstick cooking spray or line with parchment paper.
  • 2 In small bowl, combine Bisquick mix, cornmeal, salt, pepper and Italian seasoning.
  • 3 In another small bowl, beat egg. Dip zucchini slices into egg mixture; then in Bisquick mixture. Place on prepared cookie sheet. Spray zucchini with nonstick cooking spray.
  • 4 Bake at 475° for 5 minutes. Remove from oven, turn zucchini sticks; spray with nonstick cooking spray. Return to oven, and bake an additional 5 minutes or until golden brown. Serve with marinara sauce for dipping.

My family really enjoyed this dish. I did make my own changes, knowing what my family really likes... I added a few tablespoons of greated parm, and left out the salt and substiuted some mrs dash. I also used one large zucchini because that was all I had, for next time we will use smaller "baby" zucchini so the skins are not so think and tough. They didnt last long after they came out of the ovan.

Very bland. Not a good appetizer for grazers or for a party. Once zucchini gets cold, it is no longer crisp and tastes awful. Skip it.

I though this recipe was great. It was easy! I let my three year old dip the zucchini for me and put in in the baking dish.He thought it was great. It tasted good. The only thing I didnt care for is it has to be served warm. once its room temp it is not very good.
