Baked Zucchini Logs

This is a great recipe to use up that zucchini that you always seem to have to much of. It's easy to make and taste great dipped in ranch dressing.

Ingredients

1: medium Zucchini cut like fries

1: roll ritz crackers finely crushed

1/2: cup parmesan cheese

1 1/2: teaspoons basil

2: eggs beaten

1: tablespoon water or milk

1: cup flour

Directions

1 Preheat oven to 400 degrees.
2 Slice zucchini into strips resembling thick cut french fries. Crush ritz crackers to fine crushed texture, combine with basil and parmesan cheese. In seperate bowl beat egg and water.
3 Spray cookie sheet or baking pan with non-stick cooking spray.
4 Dip zucchini into flour then egg mixture then coat with cracker mixture, place on cookie sheet spacing slightly apart so they do not touch.
5 When complete spray the tops of the zucchini logs with non-stick cooking spray. Bake in the oven for about 5-7 minutes then flip and bake for an additional 10 minutes until golden brown. You may respray some more cooking spray when you flip to ensure that it does not stick or dry out.

I found it is easiest and much less clean up if you crush the crackers and mix them in a ziploc baggie then you can simple throw the zucchini into the bag and shake to coat.
