I've made this several times now and perfected it to our taste by using 1 lb. Italian sausage instead of ground beef, tomato sauce with basil, garlic and oregano instead of regular, and whole wheat penne pasta. This is one of our favorites now!!

So delish! I made this with turkey sausage as well, and it was great! My husband and I agree that it would be very bland with ground beef. I used whole wheat rotini, spinach and zucchini to make it a little healthier. Definately a recipe I will keep and keep making!

This was really great. I added more mozz cheese and zucchini. Also sub the ground meat for sausage. My 2 year old daughter even ate all of it! I will be making this again.

My family loves this recipe! It quickly became a weekly dish at our house. My 2 toddlers love it - and I double the zucchini in the recipe and everyone still loves it!!!!

We love this recipe and I always add more tomatoes, a bit more garlic and pre made meatballs(Costco) instead of the ground beef. This makes it extra good and has lots of flavor. Add extra pepper jack cheese to top and it spices it up a bit. Yum!!

wonderful dish. My husband is not a big fan of pasta, but he loved this one. It is also great with Italian sausage for the meat. Another option is to cut up eggplant put salt on it and then after a few minutes wash the excess salt off and batter with some flour brown and add to the dish before baking. This is wonderful too.

I prepared this recipe with ground turkey, whole wheat rigatoni and homemade gravy. The result was fantastic! I thought the use of only 1/2 pound of meat was suspect, but the zucchini, onion and pasta added bulk to the dish. Overall, it was a healthy, well-balanced meal that went over well at my house.

Great recipe! My bf liked it and he's a chef! A 1/2 lb is the perfect amount of meat and the fire roasted tomatoes give great flavor. We didn't see the need to bake for 20 minutes - we just baked the 5 minutes with cheese and it came out great!
