I found this recipe wonderfully delicious, but a bit on the heavy side, I substituted half the cheese with firm tofu and a touch of flour or tiny eggplant cubes(to balance off tofu juice). Regardless, this is a must dish for vegetarians and there are many variations you can add onto, this recipe base never goes wrong.

This was so simple and so good!!! I loved this and so did my husband. I made it for supper last night and we heated up the left overs in the microwave for lunch today. I used a jar of roasted red peppers instead of the tomatoes. I highly recommend this recipe!!! 5 stars for sure.

This was wonderful. We thought the servings were very large. I served it for dinner with a Waldorf salad and whole grain rolls. We found it to be more like 8 servings. The leftovers reheated very nicely in the microwave though.

I loved this recipe!!! I made it for my future sister-in-laws bridal shower luncheon and then again for my MOPS meeting and had rave reviews both times. Everyone wanted the recipe. If you love cheese this recipe is for you. :)

I made this dish for my friends at work. I substituted spinach and red pepper for the veggies and cooked this in my toaster oven the same morning!It was such a hit, that they all wanted the recipie!I think this would make a wonderful dinner, with salad and potato!
