Baked Salmon with Mango Chutney and Ginger

Ingredients

lb salmon fillet, cut into four pieces
1
can (15.25 oz) Dole Tropical Fruit
1/4
cup mango chutney
2
tbsp candied ginger, chopped
2
tbsp fresh cilantro, chopped
2
cloves garlic, minced
1
pinch red pepper flakes
lime juice
cooked rice

Directions

  • 1 Preheat oven to 400F. Arrange salmon fillets in a square baking dish sprayed with nonstick cooking spray.
  • 2 Drain tropical fruit and keep juice in a separate container. Roughly chop fruit.
  • 3 Combine chopped fruit, fruit juice, mango chutney, ginger, garlic and red pepper flakes in a medium bowl. Spoon over salmon.
  • 4 Bake for 20 minutes or until salmon flakes easily. Sprinkle with cilantro and lime juice (as desired). Serve with rice and side vegetables.
