Baked Reuben Sandwich

Ingredients

cups Original Bisquick® mix

cup milk

egg

teaspoons caraway seed
1/2
lb sliced deli corned beef
1/4
cup deli-style mustard
3/4
cup shredded Swiss cheese (6 oz)

can (14 oz) sauerkraut, well drained
1/2
cup Thousand Island dressing

Directions

  • 1 Heat oven to 400°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • 2 In medium bowl, stir Bisquick mix, milk, egg and 1 teaspoon of the caraway seed with fork until blended. Spread 1 cup batter in baking dish.
  • 3 Brush corned beef slices with mustard; layer on top of batter in baking dish. Top evenly with cheese and sauerkraut. Carefully spread remaining batter over sauerkraut. Sprinkle with remaining 1 teaspoon caraway seed.
  • 4 Bake uncovered 28 to 32 minutes or until light golden brown and center is set. Let stand 5 minutes before cutting. Serve with Thousand Island dressing.

I made this last night for dinner and it was so good! I made a little extra batter because I like my "bread" thicker, and used a little less mustard and more cheese. Overall my husband and I enjoyed very very much. Will definitely make again, but this time I'll double and make in a much bigger dish!

Sooo delicious! Got rave reviews at my St. Paddy's day get together. I doubled the recipe and made it in a 9 x 13 casserole dish. I substituted sliced deli Swiss for the shredded, and just kept layering it on, and it was soo cheesy! Make sure to use a sharp knife to cut through, or use shredded corned beef. Will definitely make this whenever I'm craving a Reuben. Oh, and super easy to make too - mix, layer, bake, and enjoy!!

I LOVE Rueben’s so I gave this a try first as I'm having a St. Patty party and thought this would be a good dish for 15 ppl. It was good but like others, there's a few things I need to change before making for a crowd. 1) more batter on bottom/less on top 2) a LOT more meat & cheese!! There wasn't enough meat and the swiss melted away to nothing. (I also used pastrami as it was cheaper than corned beef) 3) go easy on the mustard, we're not fans and even though I spread it on the slices lightly, we hit some heavy spots while eating that made your mouth wrinkle up. LOL 4) Definitely have to cut up the meat! Using the whole slices made it difficult to cut/serve without making a mess. 5) could use a little more sauerkraut as that too seemed to disappear during cooking. It's a keeper though!!
