Baked Lemon Doughnuts with Lemon Glaze

Ingredients

Doughnuts

1 1/2
cups Bisquick® Complete pancake & waffle mix
2
tablespoons granulated sugar
1
teaspoon grated lemon peel
1
tablespoon lemon juice
1/3
cup milk
1
teaspoon vanilla

Glaze

1/2
cup powdered sugar
1
tablespoon milk
1
teaspoon lemon juice
Yellow sugar crystals or candy sprinkles, if desired

  • 1 Heat oven to 425°F. Spray mini doughnut pan with cooking spray.
  • 2 In medium bowl, mix all doughnut ingredients with spoon until blended. Spoon batter into pan, using about 1 tablespoon for each doughnut.
  • 3 Bake 6 to 8 minutes or until toothpick inserted near center comes out clean. Remove doughnuts from pan to cooling rack; cool 5 minutes.
  • 4 Meanwhile, in small bowl, mix powdered sugar, 1 tablespoon milk and 1 teaspoon lemon juice with whisk until smooth.
  • 5 Dip tops of doughnut tops in glaze; sprinkle with sugar crystals. Serve warm.

Substitute orange peel and juice to make orange doughnuts.

When grating citrus, be sure to remove only the peel and not the white layer between the peel and fruit (pith), which can be bitter.

Although this was tasty, there was no way that the batter was "spoonable"! and...they were denser than I expected or prefer. I believe more liquid is required, but when I called General Mills, I was not able to get an answer, only that my "concerns" were "going to be forwarded".

Fun and worthwhile. Notable lemon flavor. I used less sugar for the glaze with good results. Delicious without the glaze. Petite sweetness!
