Baked Fish with Confetti Stuffing

cups Progresso™ chicken broth (from 32-oz carton)

tablespoons butter or margarine
2
cups frozen broccoli, carrots and cauliflower
1
package (6 oz) Betty Crocker™ Homestyle Stuffing chicken flavor
1
lb fish fillets, about 3/4 inch thick
1
tablespoon chopped fresh parsley
1/2
teaspoon seasoned salt

Directions

  • 1 Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  • 2 In 3-quart saucepan, heat broth and 2 tablespoons of the butter to boiling over high heat. Stir in frozen vegetables; cook 2 minutes.
  • 3 Stir in stuffing mix until evenly moistened. Spoon into baking dish. Arrange fish fillets on stuffing mixture. Melt remaining 1 tablespoon butter; stir in parsley and seasoned salt. Brush butter mixture over fish.
  • 4 Cover with foil; bake about 35 minutes or until fish flakes easily with fork.

Use a mild white fish in this casserole, such as cod, walleye or pike. Cut large pieces into serving-size. Use fillets of a similar thickness for even cooking.

Seasoned salt, a mixture of salt and spices such as paprika, garlic, turmeric and onion, jazzes up dishes with a couple of shakes.
