small-medium tomatillos, peeled and halved

clove garlic, sliced
1
lime, zested and juiced
1
shallot, peeled and sliced
1
ancho (pasilla) chile, dried
1
lb boneless skinless chicken breasts

avocado, sliced
  1. Soak chile in 1/2 c. hot water for 30 minutes. Chop.
  2. Roast tomatillos on dry skillet, medium-high, 10 min., with the cut side down. Turn, roast 5 min. more.
  3. Blend all ingredients, except chicken breasts, until smooth.
  4. Pour sauce over chicken breasts in 8x8" baking dish.
  5. Bake uncovered 375 degrees F, 40 minutes, until 180 degrees F.
  6. Serve with sliced avocado, rice & beans.
