Ingredients

cups cauliflowerets (1 pound)
1
cup chopped fresh mushroom (4 ounces)
1/2
cup chopped red onion
1
tablespoon olive or vegetable oil
2
teaspoons lemon juice
2
teaspoons cider vinegar
1/2
teaspoon salt
1/4
teaspoon pepper
2
garlic cloves, finely chopped
1/3
cup chopped green onion

Directions

  • 1 Heat oven to 350ºF. Spray square baking dish, 9x9x2 inches, with cooking spray.
  • 2 Mix all ingredients except green onions. Spread evenly in baking dish.
  • 3 Bake uncovered 40 to 45 minutes, stirring occasionally, until vegetables are tender and golden brown. Sprinkle with green onions.

I really like cauilflower and love mushrooms. Was looking forward to making this dish for my birthday dinner. But have to say I was really disappointed. My husband could not even eat it. It was horrible. Will not make it again. Why the vinegar? It ruins the flavor of the veggies. Sorry but this recipe shouldn't even get a one spoon rating.

steamed veggies again i don't think so! gave this a try and it was great! my husband who doesn't love veggies really enjoyed it and asked to have it again.
