I really like cauilflower and love mushrooms. Was looking forward to making this dish for my birthday dinner. But have to say I was really disappointed. My husband could not even eat it. It was horrible. Will not make it again. Why the vinegar? It ruins the flavor of the veggies. Sorry but this recipe shouldn't even get a one spoon rating.

steamed veggies again i don't think so! gave this a try and it was great! my husband who doesn't love veggies really enjoyed it and asked to have it again.

The flavors in this casserole work well together. The dish is creative and healthy. I think 40-45 minutes of bake time is a little high as the vegetables get quite dry, since there is not a whole lot of oil. So if the cooking time were decreased a bit, the vegetables would most likely retain moisture and flavor.
